I don’t know about you guys but when it comes to eating healthy, the two things I miss most are Mexican food and pasta. No matter how much you don’t want to believe it…pasta is not good for you! Recently they have been coming out with these crazy noodles that are wheat or have protein and fiber or are made out of eggs…idk anything about that but trust me…after you add all the butter, cream sauce, and cheese you have a bowl full of fat!
However, I fully understand that everybody needs a little Italian food in their life so here is a recipe I love when I am craving pasta… without making me feel disgusting and like I was at Olive Garden for the last 2 hours.
Shrimp Scampi with Zucchini Noodles is quick, easy, healthy, and so delicious. You can also make it your own by adding your favorite veggies and spices to give it a kick!
First, I highly recommend you buy this tool. It is called Vegetti (I know bad name…) but it turns your favorite vegetables into noodles. It cost me about $15 and I know that might sound like a lot but I promise you, it is worth every penny. Also, grocery stores are starting to sell prepackaged veggie noodles…but it is about $7 for a pack of sweet potato noodles which is ridiculous and not cost effective. Trust me! Get this tool it is worth the money and it is actually pretty fun to use (I know I am a child!) Btw there is a thing called Vegetti Pro…do not buy that! It is like 10 extra dollars and the only difference is it has a crank instead of using two hands to make the noodles. Just get the cheaper one! Don’t be lazy! haha
Anyways, here is the recipe!
WHAT YOU WILL NEED:
- 2 – medium sized zucchini
- 10-8 medium sized shrimps
- 1 lemon
- minced garlic
- olive oil
- salt and pepper
- red chilli flakes
- parmesan cheese
First, in a medium pan combine a 1/2 cup of olive oil and a tablespoon of minced garlic. Then add your shrimp, if they are uncooked let them cook in the pan on low heat until they are pink. If they are already cooked just let them heat up in the oil and garlic and collect flavor. Sprinkle with salt and pepper and squeeze half a lemon on the shrimp (make sure to get the seeds out of there.) Add your chilli flakes if you want your scampi a little spicy
While the shrimp are cooking (or heating up) cut both ends off your 2 zuchinni and use the vegetti to make them into noodles. 2 zucchinis may seem like a lot, but trust me you can eat about 1 for yourself. Also the noodles tend to be in one long strand so I would take a knife and cut the noodles up (makes them easier to serve and stir.) Let the noodles cook while you sprinkle them with salt and pepper. Stir the noodles until they are at your desired texture ( I like mine warm but still a little crunchy.) Make sure you don’t overcook them or they come out runny and mushy.
Lastly, combine your cooked shrimp mixture with the zucchini noodles, squeeze the other half of the lemon over noodles and top with parmesan cheese and red pepper flakes.
Also if you are like me…garlic bread is a must with pasta. However, garlic bread is never good for you. So to help my craving of more carbs with my carbs I made sweet potato toast with avocado. (btw I know the avocados are a little brown…give me a break…do you know how hard it is to find ripe avocados in Buffalo!)
